Agar is a hydrocolloid extracted from the cellular walls of agarophyte seaweed; commonly used as gelling, thickening and stabilizing food additive.
Agar does not require addition of other products or ions for gelation, and its strong gelling capacity allows agar gels to be formed from very dilute solutions. The gels formed are firm and stable.
